1 lb of extra or colossal shrimp raw, defrosted, shelled & deveined
2 cups of coconut flour 
2 cups of gluten free panko
2 cups of sweeten coconut flakes
4 eggs, beaten
4 tablespoons of unsalted butter, melted
Juice of 1 lime, plus lime wedges
Old bay seasoning

Rinse shrimp & pat dry
Mix panko, coconut flakes & melted butter together & empty into a shallow dish Beat eggs with lime juice in bowl Empty coconut flour into another shallow dish Sprinkle just a bit of the old bay seasoning on dry shrimp Add shrimp to flour & coat Next add coconut flour coated shrimp to egg batter & coat Finally add egg coated shrimp to panko mix & coat well Put shrimp in a air fryer at 350 for 22 mins Let cool for a bit once done.

Squeeze a bit of lime over & enjoy.
